Pork should be cooked slowly and on lower heat.

Cooking it too fast can burn it.

Under-cooking it makes it rubbery.

Nothing is like it when it is cooked correctly.

Happy Valentines Day

Friday Bacon Rant




This image had me smiling this week when I saw it on Facebook.
A few thoughts about the heavenly food.

    •  I'm not a fan of wrapping it around stuff as it loses it's crispness;
    •  Crispiness is the main thing - hate limp bacon;
    •  I think that it enhances the flavor of cheeseburgers;
    •  The "B" is the only thing needed in a BLT;
    •  Center cut bacon gives me the illusion of eating healthy.

Not sure that rant is the proper title but I can go on about the stuff. ツ

Consumer Reports on Bacon



Yeah, I could not believe that Consumer Reports tests bacon as well as cars, washing machines and televisions.
That said, here is the bottom line result from their report on the heavenly food:
Kirkland Signature Regular tastes best. It’s sold as four 1-pound packages, so you may need to freeze some. ... Very good alternatives include Great Value Lower Sodium or, for thicker slices, Oscar Mayer Thick Cut. A higher price didn’t mean better bacon: The priciest product of all, Oscar Mayer Fully Cooked, rated lower than many others.
I was disappointed that they did not test or recommend center cut bacon as it seems to be less fatty that other varieties. Anyone ever buy 4 pounds of Kirkland Signature Regular bacon at Costco? Is it really better than other brands?

Eat Bacon :: Live Longer



According to an article titled "Study shows eating Bacon will make you live Longer" ...
Science has enriched the lives of bacon-lovers everywhere. A study conducted by researchers at ETH Zurich has concluded that the high levels of Vitamin B3 (known as niacin) in this meat could help you live longer.
And they told me bacon would kill me! Lets all give "science" a standing ovation!

When Good Things are be Bad




If you have frequented my blog in the past you may have gotten the impression that I eat bacon every day. Not so! Twice a week I partake of the nectar of life. And on occasion I have noshed on a twinkie.

Yet I have to say that this image simply grosses me out. Some things are fabulous by themselves but are simply never meant to be combined with other good things. The beauty of a rose stands on its own.

Remember this if you put anchovies on your pizza!

Bacon Hacks

It has been a while since I have posted anything about my favorite blog topic. After reading 8 Essential Bacon Hacks from LifeHacker I just couldn't resist. Here are a few of their hacks:
  • Ditch the Skillet; Fire Up Your Oven to Cook Perfect Bacon :: Grab a cookie or jelly roll tray, line it with foil, place the bacon on the foil, and then cook in your oven for 20-25 minutes at 375F.
  • A Strip of Bacon Saves Meatloaf from Sticking to the Pan :: The fat from one slice of bacon creates enough lubricant to prevent sticky or burned meatloaf.
  • Make Better, Less Messy Bacon in a Waffle Iron :: Cooking show host Alton Brown recommends this method as waffle irons make it easy to control the bacon by pulling away the grease from the cooking surface.

Bacon Pizza


I am not a fan of Papa Murphy's Pizza but these ingredients (crispy bacon, canadian bacon, and pepper bacon) could be a bit of a game changer.

You knew that it had to happen. Here is the recipe (like I really need one) that accompanies the picture.

Pretty hard to deny that bacon and ice cream make one heckuva gastronomical dynamic duo.

Smokin' Til Kingdom Come


Kirk, one of my real life friends and Facebook buddy, posted this image today and I just had to share it with you. It is simply hard to imagine something more delectable than this treat.

And don't you just love a BBQ cooking pit crew with the name of "Disciples of the Eternal Flame"? If I am not mistaken I think that these folks might be United Methodists.

Kansas City is known as a center for BBQ - there is a great place for ribs and burnt ends just a few blocks from my place. Ann and I enjoyed some takeout from there last week. And the sweet potato fries were great.
